Grilled Water Buffalo Tri-Tip with Chimichurri Sauce:

For the Tri-Tip:

2 pounds water buffalo tri-tip
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper

For the Chimichurri Sauce:

1 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
3 cloves garlic, minced
1 shallot, minced
1/4 cup red wine vinegar
1/2 cup extra-virgin olive oil
1/2 teaspoon red pepper flakes
Salt and black pepper to taste

In a bowl, combine the olive oil, minced garlic, smoked paprika, dried oregano, salt, and black pepper to make a marinade. Rub the marinade all over the water buffalo tri-tip, cover, and refrigerate for at least 2 hours or overnight to allow the flavors to penetrate the meat.

Preheat your grill to medium-high heat. Remove the tri-tip from the marinade and let it come to room temperature for about 30 minutes.

Place the tri-tip on the grill and cook for about 5-7 minutes per side, or until it reaches your desired level of doneness. It's recommended to cook water buffalo meat to medium-rare or medium for optimal tenderness.

While the tri-tip is grilling, prepare the chimichurri sauce. In a bowl, combine the chopped parsley, cilantro, minced garlic, minced shallot, red wine vinegar, extra-virgin olive oil, red pepper flakes, salt, and black pepper. Mix well to combine all the ingredients.
