Water buffalo tongue has a mild flavor, so it can benefit from bold seasonings and spices. Opt to boil it in a large pot of water with herbs and spices until tender, or use a marinade or dry rub to add flavor then grill or roast the tongue for an additional punch flavor and texture.

Recipe Suggestion

"Lengua Estofado" (a traditional Filipino dish) that uses water buffalo tongue to replace ox tongue:


2.2 lbs water buffalo tongue
3 tablespoons olive oil
2 cloves garlic, minced
1 onion, sliced
1/2 cup tomato sauce
1/2 cup water buffalo bone broth
1/4 cup soy sauce
1/4 cup vinegar
1 tablespoon brown sugar
1 bay leaf
Salt and pepper to taste


Remove the outer skin on the water buffalo tongue and boiling it until it is tender. Cut it into thin slices and set aside.

In a pan, heat the olive oil and sauté the garlic and onion until they are soft and translucent.

Add the tomato sauce, bone broth, soy sauce, vinegar, brown sugar, bay leaf, salt, and pepper. Stir well.

Add the water buffalo tongue to the pan and mix into the sauce.

Simmer the mixture for 15-20 minutes until the sauce thickens and the flavors are well blended.

Serve hot over rice or potatoes.
